Skinny Pumpkin Spice Latte

Fall is here, my friends! There isn’t anything I love more around this time of year than to try all things pumpkin! Most of you, if you’re anything like me, probably line up at your local coffee shops in the fall to get your hands on Pumpkin Spice Lattes. Well, today I’m going to share with you my version of a Skinny Pumpkin Spice Latte! One of the best parts about this recipe is no fancy equipment is required. If you have a whisk or blender, you will be able to whip this up in no time!

Ingredients: ½ cup fat-free milk; ½ tbsp canned pumpkin; one package sugar substitute (such as Stevia, Splenda, or 1 ½ tsp sugar); ½ tsp vanilla extract; ¼ tsp pumpkin pie spice; ½ cup strong brewed hot coffee.

Instructions: In a sauce pan, whisk together milk, pumpkin, and sugar substitute and cook on medium heat, stirring until it steams. Remove from heat, stir in vanilla and pumpkin pie spice. Transfer to blender and blend for 15 seconds until it foams. If you don’t have a blender, don’t worry. Just use the whisk until it’s foamy. Pour into a mug and add hot coffee, then top with whipped cream and cinnamon! Enjoy!
