Lavender Lemonade

Lavender Lemonade

1 cup of sugar

2 cups of water

2 lemons, zested

6 lemons, juiced

8 sprigs of lavender


1.Combine sugar, juiced lemons, and lavender into a saucepan and boil until sugar dissolves.

2.Fill a pitcher full of ice.

3.Pour mixture over ice and add zested lemon.

4.Stir, refrigerate for a few hours.



Lavender Farming

Lavender farming is an emerging market in West Virginia. In an effort to put coal miners and veterans back to work, inactive surface mines are beginning to be turned into lavender farms. In a time when people think fondly of the good old days of coal, maybe instead we can start to look forward to the great new days of lavender. Instead of our mountains being gutted and fracked, let’s see if we can embrace a new cash crop for West Virginia that gives back to the land instead of taking away. This will be a slow process. It will take time and patience from all of us to give our land the time to heal itself. Lavender takes three years before it begins to bloom, but once it does, it will prove to be extremely beneficial for our people and our economy. Every 100 acres of lavender has the potential to bring in around $1 million. Our state can become a resource for essential oils and medicine. This could be huge for us!
